Singapore, 11 April 2022 – Tucked away in the lush, landscaped gardens of Shangri-La Singapore, the charming Waterfall Ristorante Italiano is pleased to welcome onboard Chef Simone Loisi – formerly from iO Italian Osteria, as its new Chef de Cuisine.
Hailing from Puglia, Italy, Chef Simone brings with him a wealth of experience and a stellar repertoire of authentic Southern Italian specialties featuring a treasure trove of quality fine produce that is the cornerstone of Waterfall Ristorante Italiano. Diners can look forward to enjoying a vibrant and sumptuous showcase of dishes that spans his hometown specialties, signature handmade pastas and main courses.
“I am excited and looking forward to sharing the essence of South Italian cuisine to our regular and new diners at Waterfall Ristorante Italiano. A big part of my cooking philosophy is influenced by Puglia, my hometown – it is a beautiful seaside town that is rich in culture and so full of life. I hope my dishes will bring our diners’ tastebuds on a sojourn to Italy!” elaborates Chef Simone.

Diners can look forward to feasting on a new selection of tempting Antipasti (cold and hot starters), Insalate (salads), Classic and Signature Pastas, Pizze (pizza), and Secondi (seafood and meat) from the refreshed à la carte menu.
These latest additions promise to deliver an immensely soul-atisfying dining experience starring beautifully- plated dishes brimming with authentic and robust flavours created with quality ingredients that best exemplifies the spirit of Southern Italian cuisine.
Antipasti
Porchetta Alla Birra, $24
Crisp, juicy and unctuous all at once, Chef Simone rendition of this sumptuous beer-marinated pork belly is beautifully complemented with a tangy homemade sauerkraut which tempers the richness of the meat, and honey mustard that adds just a touch of tangy sweetness.
Salumi E Formaggi
300g Burrata Con Affettati, $55
A quintessential dish to start off an Italian meal with, the Burrata Con Affettati features 300g of Burrata with Mixed Cold Cuts –comprising Pugliese ingredients from the likes of Burrata, rocket, Parma ham, Mortadella, speck, salami to cherry tomatoes.
Insalate
A new category on the refreshed menu, the uplifting salads include the signature Caprese Di Mare ($28) which features a refreshing and citrusy dressing matched with slices of house-cured salmon with Juniper berries and orange zest served with flower capers, Napoli buffalo mozzarella and crisp fennel, while Campagnola ($24) is a combination of purple cabbage, Parmesan, olives, capers and capsicums mixed in a creamy yoghurt dressing.
Orecchiette Broccoli E Salsicca, $28
A dish that hails from Chef Simone’s hometown of Puglia, this unassuming and comforting pasta features a trinity of broccoli, Italian pork sausage meat and handmade Orecchiette pasta – a Southern Italian pasta shaped like little ‘ears’ that are perfect for holding the light but creamy sauce. A hint of chili, shaved Pecorino and a toasted fennel seed and breadcrumbs topping complete this creation.

Presenting the best of both worlds, Gnocchi Mare e Monti ($32) artfully combines ingredients from the sea and land – fluffy handmade potato gnocchi is tossed in a ‘umami’ prawn bisque sauce consisting sweet prawns sautéed with porcini mushrooms, juicy cherry tomatoes, and Parmigiano cheese.
Other signature pastas include a vegetarian-friendly Ravioli Burro E Salvia Su Fonduta Di Parmigiano ($28) featuring spinach and ricotta-stuffed Ravioli in a fragrant and nutty butter sage sauce served over melted parmesan, Spaghetti al Nero di Seppia con Aragosta, Asparagi, Crema di Burrata ($42) – a handmade squid ink alla chittara with half lobster and asparagus topped with a creamy burrata sauce for an indulgent touch. Perfect for sharing among three to four diners and available in a choice of either housemade tomato sauce or Aglio E Olio, Linguine Al Crostacei In Crostia Di Pane is brimming with a medley of pristine crustaceans the likes of one whole lobster, prawns, scallops, mussels and clams – covered with a thin layer of bread dough, the pasta is baked in the oven briefly to render a crusty top which is great for ‘scarpetta’, or soaking and gathering the leftover pasta sauce from the plate.
Pizze
Be tempted by Chef Simone’s pizza creations: Mortadella e Stracciatella ($29), is a ‘cicchio’ or Southern Italian flatbread draped with dollops of luscious Stracciatella cheese, sundried tomatoes and pistachio, while Rotolino ($32) presents a long, rolled pizza stuffed with mascarpone, truffle cream, cooked ham and parmesan chees. A vegetarian option, Verdure ($26) showcases the unadulterated innate flavours of quality produce such as capsicum, zucchini, eggplant and tomatoes atop tomato sauce and mozzarella.
Secondi
Dive into two mouth-watering seafood dishes; Branzino alla Griglia ($42) – expertly-grilled seabass fillet with a rich beetroot sauce, and Polpo alla Plancia – an impressive whole octopus leg which is first steamed till tender then grilled over high heat to achieve a caramelised char. Served with lemon wedges, potato cream and a mixed salad – this is a Mediterranean- inspired dish that is great for communal dining.
Pollo Arrosto alla Diavola con Patate e Carote al Forno ($38) is a Southern Italian classic – half spring chicken marinated with chilli, mixed herbs and garlic first slow cooked then roasted in the oven to render a succulent chook with a glistening golden-brown skin – the flavourful chook is served in its own jus with mixed greens. Savour Braciola di Maiale ai Ferri con Isalata Mista e Pepperoni alla Griglia ($42) – a tender and moist grilled pork chop served with grilled capsicums, salad and baked potatoes. Tagliata Di Manzo ($48) proffers fork-tender roast beef tenderloin complemented with a nutty rocket salad, parmesan cheese and a homemade balsamic and shallot sauce.
